Back from the Dead!

So I know it has been a long long time!! I got a job, moved into an awesome apartment, got a cat, and have been crazy busy! And although I know I won't be able to blog all the time like I was doing before I am going to try and post when I make something super awesome. Like today,

Say hello to the awesomeness of Vanilla Chai Cupcakes with a Honey Chai Buttercream. I needed to make cupcakes for our staff meeting on Monday but really didn't feel like going to the store. I came across a couple chai cupcake recipes and came up with my own version. I think a cream cheese icing would be really good on these too- kind of like a kicked up spice cake! I just didn't have any cream cheese and was really not going to the store! I made mini cupcakes because I needed more and didn't have enough butter to double the recipe! These are really moist and yummy and taste just like chai. Don't skip infusing the chai with the milk because that is really what kicks them up a notch.

Vanilla Chai Cupcakes

1/2 cup milk
2 vanilla chai tea bags
1 stick butter
1 cup sugar
2 tsp vanilla extract
2 eggs
1 1/4 cups flour (I used a mix of cake flour and all purpose just because I had both)
1/4 tsp salt
3/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp baking soda
1/2 tsp apple cider vinegar


1. Put the milk and tea bags in a saucepan and bring to a boil. (Note: If you have a gas stove don't dangle the string with the tag over the side of the pan. That is a great way to catch the tag on fire. After one teeny tiny fire and a new pot of milk and tea bags I decided to take the string and tag off!)
2. After it comes to a boil turn off the stove and let the tea seep for a bit in the milk while you start on the cupcakes.
3. Cream the butter until its nice and fluffy.
4. Add in the sugar and mix it for a bit until its fluffy
5. Add the vanilla and then the eggs one at a time.
6. Sift together the flour, salt, cinnamon, ginger, cloves, and nutmeg into a separate bowl. (Note: You could also add in some cardamon but I just didn't have any to put in)
7. Alternately add a bit of the flour mixture and the chai infused milk to the creamed sugar and butter mix
8. Taste and adjust the spices if you want!
9. Combine the vinegar and baking soda in a separate bowl and once its all done fizzing add it into the mix
10. Bake at 325 for 15 minutes (This is for mini cupcakes- if you want normal sized cupcakes they might need to bake a little longer)

Honey Chai Buttercream

3 tbls butter
1/3 cup shortening (You could use 1 stick of butter but I only had 3 tbls of butter left so I improvised)
2 1/2 cups powdered sugar
3 tbls milk
3 tbls honey
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger

1. Cream the butter and shortening together
2. Add in everything else and mix for a while until it gets really smooth and fluffy

If I had thought enough ahead I would probably have done 3/4 cup of milk with 3 tea bags when I did the cupcakes and saved the rest to add into the icing. But I didn't think ahead and I didn't feel like taking the extra work for only a few tablespoons of milk. But I am sure that it would have been even better if I had done that.

Mexican Food Twice Yesterday

So last night Ashley had to get a rain check on dinner because her arm is still hurting from the pinched nerve. Instead I went over to Erica's and hung out with her and then went to dollar taco night at Little Mexico. We started with peach margaritas.

Then I got a taco which somehow managed to not get its picture taken. Then we were thinking we were done until our waiter told us about the swirl margarita aka Christmas margarita that was like a lime margarita with sangria on top. We shared this and the our waiter bought us another one and we shared that too!

Going out for Mexican twice yesterday definitely did not agree with my body! I woke up at 2 am with really bad cramps and my stomache felt awful! I took some pepto bismal which helped a little and went back to bed! This morning I felt so gross so I made myself some spiced tea to drink while catching up on blogs and facebook.
Then I started looking over my notes for my psyc exam tonight. I made some white cheddar bunny butts for lunch, I was going to make something else but my milk is on its last leg this week and I need to use it up.
Now I'm getting ready to head to class early so I can stake out a plug for my computer since it still doesn't charge! Then I have this psyc exam at 4 and my special needs exam at 7 and then I'm done with class for forever!!! yay! After everyone finishes special needs we are going out to celebrate being done with VCU (except our student teaching) and Cinco de Mayo!

Going Away Party!

Sorry I haven't posted at all this weekend!! Friday I was sick and I spent most of the day in bed! I really don't remember what I ate but I promise you it wasn't exciting and I was too sick to take pictures! Luckily on Saturday I was feeling better because I had my going away party that night and didn't want to be sick for that! I wasn't feeling 100% in the morning so I started the day with some cranberry orange toast with almond butter- of course.
Then I had some spiced tea that my mom makes- it is basically instant tea, cinnamon, cloves, nutmeg, lemonade, and tang (i know it sounds gross but its actually really delicious). It was exactly what I needed and I felt so much better!

After breakfast and a shower I ran to the grocery store to pick up supplies for all the things I was planning on making. When I got back I made a wrap for lunch. It had my last portabella gardenburger, spinach, goat cheddar, and hummus!
And the last juice box that I hijacked from our tutoring party last week.
Then I made some spiced nuts- it was a mix of almond, pecans, and walnuts. I cooked them in some melted butter and then added brown sugar, cinnamon, and cloves. They were delicious and I would have added some nutmeg too but I didn't have any!
Then I made some fake samoa girl scout cookies from Baking Bites. They were delicious- my only problem was that I didn't have all the coconut it called for and it definitely could have used more. And I also ran out of chocolate so they didn't all get chocolate on the bottom!
Then I made some asiago garlic bread. It was asiago and garlic (clearly haha) mixed with a little mayo, basil, and oregano. They were pretty delicious.
And I got some Sabra hummus- which is pretty much the best hummus ever.
And some Sundried Tomato and Basil Wheat Thins and Fire Roasted Tomato and Olive Oil Triscuits to go with the hummus.
So the party was wonderful- I got to hang out and see a lot of people. It made me kind of sad because I'm pretty excited to move back home and not be in Richmond anymore but I'm going to miss everyone so much!!!! There will definitely be lots of visits back down here so I can see everyone!

This morning on my way to church I snacked on a chocolate coconut Raw Organic Food bar. yum, yum, yum. This was sooooo delicious! It is definitely up there with my new favorite kind of bar. It was really moist and had little chocolate chips all through out it. Delicious!
After church Grace and I got swiped into Shafer by two freshman! yay for free food, even though Shafer pretty much is gross! I opted for a waffle and I topped it with some vanilla yogurt and pineapple off the salad bar. It was actually pretty good, but it would have been better with fresh pineapple and/or strawberries!
Now I'm getting read to head out and go get coffee with Ashlee Giles! I'm so excited because I haven't seen her in a really long time (like probably back in September at my b-day party!). I'm trying to make sure I get to see everyone before I leave- especially everyone that couldn't make it out last night! So today is Ashlee Giles, tomorrow is lunch with Emily and Megan and then dinner with Ashley Callaway/Turner. Then sometime, possibly Tuesday for lunch Kylin and I are going to go to Cous Cous and then on Wednesday Grace and I may be doing lunch! My days are filling up fast and there are definitely more people I need to see before I leave!!!!
